Apple Cider Cupcakes
Servings: Makes about 18 cupcakes
Ingredients:
1 3/4 cups all purpose flour

1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

3/ 4 cup unsweetened applesauce
1/3 cup canola oil
3/ 4 cups light brown sugar, packed
1/2 cup granulated sugar
3 large eggs, room temperature
1 1/2 teaspoons pure vanilla extract
3/4 cup apple cider
Optional: chopped walnuts or pecans for added crunch

Instructions:
Preheat the oven to 350°F (175°C) and Line the cupcake cases with baking paper for baking.Whisk
together flour, baking powder, baking soda, salt, cinnamon and nutmeg in a medium bowl.
In a large bowl, stir together applesauce, oil, brown sugar and granulated sugar until smooth. Add the
eggs one at a time, mixing one at a time, then add the vanilla.
Gradually stir in the dry ingredients and the apple cider alternately, starting and ending with the dry
ingredients. Mix until well combined, being careful not to over mix.Add walnuts if using. Fill the
cupcake cases two-thirds full and bake for 18 to 20 minutes, or until a toothpick inserted comes out
clean.
Allow to cool briefly in pans, then transfer to a rack and allow to cool completely before icing.
Variations and Tips:
For a heartier consistency, use half whole wheat flour.
For a surprise, add a tablespoon of apple pie filling to each cupcake before baking.Pair it with a
