BAKED CHICKEN AND RICE
Ingredients
° Chicken (1,500 g), cut into 8 pieces
° 2 cups (400 g) soaked basmati rice
° 4 cups (1,000 ml) Water
° ¼ cup (60 g) Raisins

° ¼ cup (60 g) roasted almonds, halved
° 1 tablespoon (15 g) butter
° 1 teaspoon (5 g) turmeric
° ½ 1 teaspoon (5 g) saffron
° ½ teaspoon turmeric

As above prepare yellow rice with baked chicken:
Preheat the oven to 220°C. Wash the chicken well on all sides. Poke a few holes in the chicken, then season on all
sides with salt, black pepper and a teaspoon of saffron and let rest for 30 minutes. Over medium heat, add water,
butter, salt, black pepper, turmeric, remaining saffron, bay leaves and cardamom and bring to a boil. In a Pyrex or
clay pot we put the rice, raisins and almonds and stir well, then we pour in the water and stir.Place the chicken on

top of the rice and then place the baking sheet in the oven for 60 to 75 minutes until the rice is cooked through.
