Baked Salmon in Foil with Asparagus and Lemon Garlic Butter Sauce

Filleting salmon is a great way to get fresh, healthy fish with minimal cleanup. Combining it with the

• 4 whole salmon (about 150 grams each)

• 1 pound asparagus, ends trimmed

• Salt and freshly ground black pepper to taste

• 4 tablespoons of unsalted butter

• 2 cloves of garlic, finely chopped


• Juice of 1 lemon

• 1 tablespoon of honey or sugar (optional)

• 1 tablespoon of fresh parsley, chopped

• Salt and black pepper, to taste




Preheat the oven and prepare the dough:

• Preheat the oven to 200° C.

• Cut four pieces of aluminum foil large enough to wrap each salmon fillet and asparagus bundle.

2. Preparation of asparagus:

• Put the asparagus on a plate and pour olive oil on it. Toss to coat and season with salt and pepper.

3. Assembling the foil packets:

• Place a piece of asparagus on each foil. Place the salmon fillet on the asparagus.

• Season the salmon with salt and pepper. Place two lemon slices on top of each filling.

4. Prepare the garlic sauce:


• Melt the butter in a pan over medium heat. Add the minced garlic and cook for 1-2 minutes until

fragrant but not burnt.

• Remove from heat and stir in lemon juice, honey (if using) and oil. Add salt and pepper to taste.

5. Pour the sauce and place the packet:

• Squeeze the lemon and garlic over the salmon and asparagus.

• Place the foil packets on a baking tray and bake in the preheated oven for 15-20 minutes or until the

salmon is cooked through and the asparagus is tender.
