Beef Fajitas Recipe

Ingredients:

1 1/2 pounds flank steak or skirt steak

3 bell peppers (preferably a mix of red, yellow, and green), thinly sliced

1 large onion, thinly sliced

2 cloves garlic, minced

3 tablespoons vegetable oil

2 limes, juiced

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and pepper to taste

Flour tortillas, for serving

Optional garnishes: sour cream, guacamole, salsa, and shredded cheese

Marinade:

1/4 cup olive oil

1/3 cup soy sauce

2 limes, juiced

Instructions:

Marinate the Steak:

In a bowl, combine all marinade ingredients. Place the steak in a resealable bag or shallow dish and pour the marinade over it. Ensure the steak is well-coated. Marinate in the refrigerator for at least 2 hours, preferably overnight.

Prepare the Vegetables:

In a large skillet or on a griddle, heat 1 tablespoon of vegetable oil over medium-high heat.

Add the bell peppers and onion, seasoning with salt, pepper, cumin, smoked paprika, and chili powder.

Cook until the vegetables are tender and slightly charred, about 6-8 minutes. Remove from the skillet and set aside.

  1. Cook the Steak:

    Remove the steak from the marinade, letting the excess drip off. Heat the remaining 2 tablespoons of vegetable oil in the same skillet or on the griddle over high heat. Add the steak and cook for about 3-5 minutes per side for medium-rare, depending on thickness. Transfer to a cutting board and let it rest for 5 minutes.Slice the Steak:

    Slice the steak against the grain into thin strips.Assemble the Fajitas:

    Return the sliced steak to the skillet with the vegetables. Add the juice of 2 limes and toss everything together on the heat to recombine flavors. 

  2. Serve:

    Warm the flour tortillas in the oven or microwave.

  3. Serve the fajita mixture hot with tortillas and optional garnishes like sour cream, guacamole, salsa, and shredded cheese.
