Blueberry Buttermilk Breakfast Cake
Ingredients:
1/2 cup unsalted butter at room temperature
3/4 cup refined sugar
2 large eggs

1 teaspoon vanilla extract
2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 /2 teaspoons salt

1 cup buttermilk
1 1/2 cups blueberries, fresh or frozen
Instructions:
1. Preheat the oven to 175°C and grease a 23cm cake tin with butter or cooking spray.
2. Beat the butter and sugar in a large mixing bowl until light and fluffy, about 2-3 minutes.
3. Beat in the eggs, one at a time, then add the vanilla.
4. Mix the flour, baking powder, baking soda and salt in a separate mixing bowl.
5. Add the dry ingredients to the wet ingredients in 3 separate portions, alternating with the
buttermilk. Start and finish with the dry ingredients.

6. Be careful with the blue, be careful not to overdo it.
7. Pour the batter into the prepared pan and smooth the surface with a spatula.
8. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
9. Leave the cake to cool in the tin for 10-15 minutes before transferring it to a wire rack to cool
completely.
10. Serve the cake warm or at room temperature and enjoy!
