Broccoli cheese balls

– and for good reason! These broccoli and cheese balls make a great appetizer or side dish.
The recipe for baked broccoli balls is short and simple: broccoli, panko, eggs, cheddar cheese, green

onions and garlic. Blend the broccoli until smooth, then add the panko breadcrumbs, egg, grated
cheese, chopped green onion, and fresh garlic. Form them into balls and place them on the paper.
Lightly coat the balls with nonstick cooking spray (this will aid in cutting). Bake for 20 minutes until
hot and crisp.

Broccoli cheese balls
Ingredients
° 2 cups roasted broccoli (packaged)
° 1 cup panko
° 2 eggs
° 1 cup grated cheddar cheese
° 3 chopped green onions

° 2 chopped garlic
How to make:
Combine broccoli, panko, egg, cheese, scallions and garlic in a bowl. Stir until well mixed and
browned. Add salt and pepper to taste.
Form balls from the broccoli mixture and coat them on a baking sheet with nonstick spray.
Lightly brush the top of the ball with olive oil. Bake in a 400°F oven for about 20 to 25 minutes or until
browned and tender.
Another variation: Add 1/2 cup cooked white rice to mimic a regular broccoli pilaf.
