Three large russet potatoes, for six servings:

3 tablespoons olive oil

Before you begin, make sure your oven is preheated to 400 degrees Fahrenheit.

Mix mashed potatoes with olive oil, chopped garlic, Italian herbs, salt and pepper in a large mixing

bowl. It’s time to taste. Make sure the fries are covered properly before throwing them away.

Before frying, potatoes should be spread in a single layer on the baking tray. Bake for 30 minutes,

turning once in the middle to make sure both sides are cooked.

Mix the Parmesan cheese and parsley and sprinkle half of the Parmesan cheese over the fries halfway

through cooking. Once you are happy with the texture, toss gently and cook for another 10-15

minutes.
