Cheddar-Stuffed BBQ Bacon Bombs

Savory, smoky, and packed with cheesy goodness, these bacon-wrapped meatball bombs are the ultimate party appetizer or game-day snack. Juicy beef, gooey cheddar, and BBQ glaze in every bite!

Ingredients (Makes 12 bombs)

For the Meatballs:

  • 1 lb ground beef (80/20 for juiciness)

  • ½ cup BBQ sauce (your favorite brand)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp black pepper

  • 1 large egg

  • ½ cup breadcrumbs

  • 12 small cubes of sharp cheddar cheese

To Wrap & Bake:

  • 12 slices bacon

  • ½ cup additional BBQ sauce (for brushing)

Instructions

  1. Prepare the Meatballs
    In a large bowl, combine ground beef, ½ cup BBQ sauce, garlic powder, onion powder, salt, pepper, egg, and breadcrumbs. Mix well until fully combined.

  2. Stuff the Centers
    Take a scoop of meat mixture (about 2 tablespoons), flatten slightly, and place a cube of cheddar in the center. Roll into a ball, making sure the cheese is sealed inside. Repeat for all.

  3. Wrap in Bacon
    Wrap each meatball with a slice of bacon, securing the ends with a toothpick if needed.

  4. Bake the Bombs
    Preheat oven to 400°F (200°C). Place the bombs on a baking sheet lined with parchment paper. Bake for 20 minutes.

  5. BBQ Finish
    After 20 minutes, brush each bacon bomb with extra BBQ sauce. Return to oven for an additional 10–15 minutes, or until bacon is crispy and cooked through.
