Cheese-Stuffed Flatbread Recipe
Ingredients:
For the dough:
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon sugar
1 teaspoon instant yeast

3/4 cup warm water
2 tablespoons olive oil
For the filling:
1 cup shredded mozzarella cheese
1 cup feta cheese, crumbled

1/2 teaspoon black pepper
Optional additions: chopped herbs, minced garlic, or sautéed onions
Instructions:
Prepare the Dough:
In a large mixing bowl, combine flour, salt, sugar, and yeast.

Add warm water and olive oil. Mix until a soft dough forms.
Knead the dough on a floured surface until smooth and elastic, about 5-7 minutes.
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place until doubled in size, about 1 hour.
Prepare the Filling:
In a bowl, mix together the mozzarella cheese, feta cheese, and black pepper. Add any additional fillings if desired.

Assemble the Flatbreads:
Once the dough has risen, punch it down and divide it into 4 equal pieces.
Roll each piece into a ball, then flatten it into a disc about 1/4 inch thick.
Place a portion of the cheese mixture in the center of each disc.
Fold the edges over the filling, pinching them together to seal, and gently flatten into a filled pancake shape.
Cook the Flatbreads:
Heat a skillet over medium heat and lightly oil it.
Place one flatbread in the skillet and cook until the bottom is golden brown, about 3-4 minutes.
Flip the flatbread and cook the other side until golden brown and the cheese inside is melted, about another 3-4 minutes.

Repeat with the remaining flatbreads.
Serve:
Serve the cheese-stuffed flatbreads warm, ideally fresh off the skillet.
