Preheat the Skillet:

Heat a large skillet over medium-high heat. Add the olive oil and allow it to heat up.

In the same skillet, add the diced onions and bell peppers (if using). Sauté until they start to soften, about 3-4 minutes.

Add the minced garlic and cook for another minute until fragrant.

Add the Potatoes:

Add the diced potatoes to the skillet. Season with salt, pepper, and paprika. Stir to combine.

Cook the potatoes, stirring occasionally, until they are golden and tender, about 10-15 minutes. If the potatoes start to stick or the skillet seems dry, you can add a little more oil or a splash of water.

Combine Ingredients:

Return the cooked sausage to the skillet with the potatoes and vegetables. Stir to combine and reheat the sausage.

Add Cheese:

Sprinkle the shredded cheddar cheese evenly over the top of the skillet. Cover the skillet with a lid or aluminum foil just until the cheese melts, about 2-3 minutes.

Garnish and Serve:

Garnish with chopped parsley or chives. Serve hot directly from the skillet.

It’s also versatile, so you can adjust the vegetables and seasonings according to your taste.
