1 pound elbow macaroni or other short pasta

1/2 cup unsalted butter

1/2 cup all-purpose flour

4 cups milk (whole or 2%)

2 cups shredded sharp cheddar cheese


2 cups shredded mozzarella cheese

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder


1/2 teaspoon paprika (optional)

1/4 teaspoon cayenne pepper (optional)

1 cup grated Parmesan cheese (optional)

1 cup panko breadcrumbs (optional)

2 tablespoons melted butter (optional, for topping)



Cook the Pasta:

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.

Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, according to


package instructions. Drain and set aside.

Make the Cheese Sauce:

In a large saucepan, melt the butter over medium heat. Stir in the flour to form a roux and cook for

about 1-2 minutes, stirring constantly, until the mixture is lightly golden and bubbly.

Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring constantly, until

the mixture thickens and begins to simmer.

Reduce the heat to low and add the shredded cheddar and mozzarella cheeses. Stir until the cheeses

are fully melted and the sauce is smooth.

Season the sauce with salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper

(if using). Taste and adjust seasoning as needed.

Combine Pasta and Sauce:

Add the cooked pasta to the cheese sauce and stir until the pasta is fully coated.

Pour the macaroni and cheese into the prepared baking dish, spreading it evenly.

Prepare the Topping (Optional):

In a small bowl, combine the panko breadcrumbs, grated Parmesan cheese, and melted butter. Mix

until the breadcrumbs are evenly coated.

Sprinkle the breadcrumb mixture evenly over the top of the macaroni and cheese.

Bake the Mac and Cheese:
