1 cup granulated sugar

1/2 cup light corn syrup

1/4 cup water

1 cup roasted peanuts (unsalted or lightly salted)

1 teaspoon baking soda

1 teaspoon vanilla extract

1/4 teaspoon salt (if using unsalted peanuts)



Prepare the Baking Sheet:


Line a baking sheet with parchment paper or a silicone baking mat. Set aside.

Cook the Sugar Mixture:

In a medium saucepan, combine the granulated sugar, light corn syrup, and water.

Cook over medium heat, stirring constantly, until the sugar dissolves and the mixture comes to a boil.

Stop stirring and continue to cook until the mixture reaches 300°F (150°C) on a candy thermometer

(hard crack stage).

Add Peanuts and Butter:

Quickly stir in the roasted peanuts and unsalted butter.

Continue to cook, stirring constantly, until the butter is melted and the mixture is well combined.


Add Baking Soda and Vanilla:

Remove the saucepan from heat and immediately stir in the baking soda, vanilla extract, and salt (if
