CREAM CHICKEN COOKIE CASSEROLE
INGREDIENTS:
1 small onion
1 1/2 teaspoons butter
2 pounds chopped cooked chicken breasts or 2 pounds boneless, skinless chicken thighs
1 can (10 3/4 ounces) heavy cream Chicken Soup
1/2 cup mayonnaise

1 cup milk
1/2 cup chopped peppers or 1/2 cup sauteed red peppers or 1/2 cup jar fried red peppers
1 1/2 cups grated mild cheddar cheese
chilled biscuit
INSTRUCTIONS:
1- Preheat oven to 350.

2- Grease bottom and sides of an 11 x 7 inch baking dish or 10 inch quiche dish.
3- Chop onion.
4- Heat the butter in a small non-stick frying pan and fry until soft.
5- Mix the cooked onions, soup, chicken, milk, peppers and mayonnaise in a bowl and then pour into
the prepared baking dish.Bake for 6-15 minutes and remove from the oven.

7- Sprinkle 1 cup cheese over the baked mixture.
8- Arrange the crackers decoratively in a layer and sprinkle the remaining 1/2 cup cheese on top.
9- Return the casserole to the oven and bake until the biscuits are golden brown and the sauce is
bubbling, usually about 20 minutes longer.
