For the Chocolate Cake

2 cups all-purpose flour

2 cups granulated sugar

3/4 cup unsweetened cocoa powder

2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

1 cup buttermilk, at room temperature

1/2 cup vegetable oil

2 large eggs, at room temperature

2 teaspoons vanilla extract

1 cup boiling water

For the Chocolate Ganache

12 oz semi-sweet chocolate, finely chopped

1 1/2 cups heavy cream

2 tablespoons unsalted butter, softened

For the Chocolate Frosting

1 cup unsalted butter, softened

3 1/2 cups powdered sugar

1/2 cup unsweetened cocoa powder

1/2 cup heavy cream

2 teaspoons vanilla extract

A pinch of salt

Step 1: Prepare the Cake

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and line the bottoms with parchment paper.

Mix Dry Ingredients: In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Combine Wet Ingredients: In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.

Combine and Mix: Add the wet ingredients to the dry ingredients and mix until combined. Slowly add the boiling water to the batter, mixing until smooth. The batter will be thin.

Bake: Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Step 2: Make the Chocolate Ganache

Heat Cream: In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not let it boil.

Combine with Chocolate: Place the chopped chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for 5 minutes. Add the butter and stir until the chocolate is completely melted and the mixture is smooth.

Cool: Let the ganache cool to room temperature, then refrigerate until it thickens and is spreadable, about 1 hour.

Step 3: Prepare the Chocolate Frosting

Beat Butter: In a large bowl, beat the softened butter until creamy.

Add Dry Ingredients: Gradually add the powdered sugar and cocoa powder, beating on low speed until combined.

Add Cream and Vanilla: Add the heavy cream, vanilla extract, and a pinch of salt. Beat on high speed until the frosting is light and fluffy.

Step 4: Assemble the Cake

Level the Cakes: If necessary, level the tops of the cooled cakes using a serrated knife.

Layer and Fill: Place one cake layer on a serving plate or cake stand. Spread a thick layer of chocolate ganache over the top. Place the second cake layer on top of the ganache.

Frost the Cake: Use the chocolate frosting to cover the top and sides of the cake, smoothing it with a spatula or cake scraper.

Step 5: Decorate and Serve

Add Final Touches: If desired, drizzle melted chocolate over the top of the cake or add chocolate shavings for decoration.

Chill: Refrigerate the cake for at least 1 hour before slicing to allow the ganache and frosting to set.

Serve: Slice and serve the cake, garnished with fresh berries or a dollop of whipped cream if desired.

Tips for Success

Room Temperature Ingredients: Ensure that all ingredients, especially the eggs and buttermilk, are at room temperature for the best results.

Chill the Ganache: Let the ganache thicken in the refrigerator before spreading it on the cake to prevent it from dripping.

Even Layers: Use a serrated knife to level the cake layers for a professional-looking finish.

This Decadent Chocolate Layer Cake is a chocolate lover’s dream come true. With its rich layers of cake, smooth ganache, and creamy frosting, it’s perfect for birthdays, holidays, or any special occasion. Enjoy the process of baking and the delicious result!
