Brioche is a rich, tender, and buttery bread that is perfect for breakfast or as a snack. This homemade

brioche recipe yields a soft, fluffy loaf with a beautiful golden crust.




500g of all-purpose flour

70g of sugar

10g of salt

10g of instant yeast


4 large eggs

100ml of warm milk

200g of unsalted butter, softened and cut into small pieces

1 egg (for egg wash)

Pearl sugar (optional, for topping)

Step 1: Prepare the Dough


Mix Dry Ingredients: In a large mixing bowl, combine the flour, sugar, salt, and instant yeast.

Add Wet Ingredients: Add the eggs and warm milk to the dry mixture. Mix until the dough starts to

come together.


Knead the Dough: Knead the dough on a lightly floured surface until it is smooth and elastic. This

can take about 10 minutes if kneading by hand, or 5-7 minutes with a stand mixer fitted with a dough


Incorporate the Butter: Gradually add the softened butter to the dough, one piece at a time,

ensuring each piece is fully incorporated before adding the next. The dough should be smooth and

shiny once all the butter is incorporated.

Step 2: First Rise


Let It Rise: Place the dough in a lightly greased bowl, cover it with a clean kitchen towel or plastic

wrap, and let it rise in a warm place until it doubles in size. This will take about 1-2 hours.


Step 3: Shape the Brioche


Deflate the Dough: Once the dough has doubled in size, gently deflate it by punching it down.

Shape the Dough: Divide the dough into equal pieces and shape them into balls. Arrange the balls in

a greased loaf pan or on a baking sheet lined with parchment paper.

Step 4: Second Rise


Second Proofing: Cover the shaped dough with a kitchen towel and let it rise again until it doubles in

size. This will take about 1 hour.

Step 5: Bake the Brioche

Preheat the Oven: Preheat your oven to 180°C (350°F).

Egg Wash and Toppings: Beat the remaining egg and brush it over the top of the brioche for a shiny,

golden crust. Sprinkle pearl sugar on top if desired.

Bake: Bake the brioche in the preheated oven for 25-30 minutes or until the top is golden brown and

a skewer inserted into the center comes out clean.

Step 6: Cool and Serve

Cool: Allow the brioche to cool in the pan for 10 minutes before transferring it to a wire rack to cool


Serve: Enjoy your homemade brioche bread plain, with butter, or your favorite jam.
