Powdered Sugar: 1/2 cup

Vanilla Extract: 1 teaspoon

Cream Cheese: 8 ounces, softened (optional, for added richness)

For the Fruit Topping:

Strawberries: 1 cup, sliced

Blueberries: 1 cup

Blackberries: 1 cup

Raspberries: 1 cup

Kiwis: 2, peeled and sliced


Peaches or Nectarines: 2, sliced

Mandarin Oranges: 1 can, drained

Cherries: 1 cup, pitted (optional)

Mint Leaves: for garnish

For the Fruit Glaze:

Apricot Jam: 1/2 cup

Water: 2 tablespoons



Prepare the Cake:

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with

parchment paper.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large mixing bowl, beat the butter and granulated sugar with an electric mixer on medium speed

Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

wire rack to cool completely.

In a large mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract on high speed until

stiff peaks form.

If using cream cheese, beat it separately until smooth, then fold into the whipped cream mixture for a

richer frosting.
