For the Steak:

4 ribeye steaks, about 1 inch thick

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

2 tablespoons olive oil

Salt and pepper to taste

For the Potatoes:

1.5 pounds baby potatoes, halved

3 tablespoons olive oil

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

Salt and pepper to taste

Step 1: Marinate the Steaks

In a small bowl, combine minced garlic, rosemary, thyme, olive oil, salt, and pepper.

Rub the mixture evenly over both sides of the steaks.

Cover and refrigerate the steaks for at least 30 minutes to marinate.

Step 2: Prepare the Potatoes

Preheat the oven to 400°F (200°C).

In a large mixing bowl, toss the halved baby potatoes with olive oil, minced garlic, salt, and pepper until well coated.

Spread the potatoes in a single layer on a baking sheet.

Step 3: Roast the Potatoes

Roast the potatoes in the preheated oven for 25-30 minutes, or until they are golden brown and crispy.

Stir the potatoes halfway through the cooking time to ensure even roasting.

Once done, remove from the oven and sprinkle with fresh parsley.

Step 4: Cook the Steaks

Heat a grill pan or skillet over medium-high heat.

Add the marinated steaks to the hot pan.

Cook the steaks for about 4-5 minutes per side for medium-rare, or until they reach your desired level of doneness.

Remove the steaks from the pan and let them rest for 5 minutes before serving.

Step 5: Serve

Arrange the roasted potatoes on a large serving platter.

Slice the rested steaks and place them on top of the potatoes.

Drizzle any remaining pan juices over the steaks and potatoes for extra flavor.

Garnish with additional chopped parsley if desired.

Tips for Success

Marinating Time: For the best flavor, marinate the steaks for at least 30 minutes. For a deeper infusion of flavors, marinate them for up to 24 hours.

Steak Doneness: Use a meat thermometer to check the internal temperature of the steaks. For medium-rare, the temperature should be about 135°F (57°C).

Potato Variations: Feel free to add other herbs or spices to the potatoes for additional flavor. Paprika, oregano, or dill are great options.
