LADY BIRD JOHNSON’S LEMON CAKE

Ingredients:

• 3/4 cup soft butter

• 1 1/4 cups sugar

• 8 egg yolks

• 2 1/2 cups flour

• 3 tablespoons baking powder

• 1/4 teaspoon salt

• 3/4 cup milk

• 1 teaspoon vanilla extract

• 2 t. Lemon juice

• 1 teaspoon grated lemon peel

Instructions:

Preheat the oven to 180°C. Mix butter and sugar until fluffy. In a separate bowl, beat the egg yolks until pale and

lemon colored. Add to cream mixture.Mix flour, baking powder and salt. Stay 3 times. Add the sifted ingredients

to the cream mixture, alternating with the milk in thirds. Beat the dough well after each addition. Add vanilla

extract, lemon zest and lemon juice.Beat for 2 minutes. Bake in a greased bundt pan in the oven for 1 hour or

until a cake tester inserted in the center comes out clean. Remove from oven and allow to cool for 19 minutes

before turning out onto a serving plate.

LEMON GLAZE

2 cups powdered sugar

1-2 tsp. fresh lemon juice

1-2 t.Buttermilk
