Lemon marinated pork
Lime and coriander marinated pork tenderloin, grilled and then topped with chimichurri sauce.
Ingredients
For the pork
1 pork loin (about 1 1/2 pounds)
2 cloves garlic, minced

1/4 cup lemon juice
1/4 cup olive oil
1/4 cup chopped cilantro
For the chimichurri
3 4 cups parsley

3 garlic cloves, minced
2 tablespoons red wine vinegar
1 teaspoon dried oregano
1 teaspoon salt
1 Serrano chili, deseeded and finely chopped

1/4 teaspoon black pepper
1/2 cup olive oil (approx.)
Instructions
Place all marinade ingredients in a large resealable plastic bag. Smash everything around the pig. Seal
and place in the refrigerator for 2-6 hours.
Make the chimichurri

Add everything except the olive oil to a small food processor or blender
Pulse until finely chopped.
With the food processor on, pour in the olive oil until the desired consistency is reached.Cover and
refrigerate until ready to serve.
To cook pork
Preheat grill to medium heat, about 350°F.
Roast the pork for about 35 to 40 minutes, depending on the size, turning regularly.
Top with chimichurri to serve.
