Lombardy Chicken
Ingredients
o 8 oz package fresh sliced mushrooms.
or 2 tablespoons melted butter.
or 6 boneless, skinless chicken breast fillets.
or ½ cup all-purpose flour.
or ⅓ cup butter.or ½ cup chicken broth.

or ⅛ teaspoon pepper.
or ½ cup shredded mozzarella cheese.
or ½ cup Parmesan cheese.or 2 spring onions, chopped.
How to Make Lombardy Chicken
In a large nonstick skillet, melt 2 tablespoons butter over medium-high heat and sauté the mushrooms, stirring

constantly, 3 to 5 minutes.
Cut each chicken breast in half lengthwise, place between 2 layers of sturdy plastic wrap and flatten to 1 inch
thickness.
Dust the chicken with flour and fry in 1 to 2 tablespoons of butter in a large non-stick pan over medium heat for
3 to 4 minutes per side. Remove the chicken from the pan, leaving the fat in the pan.Scatter mushrooms over the

chicken.
In the same pan, add the stock and bring to the boil. Reduce heat and simmer for 10 minutes, stirring
occasionally. Season with salt and pepper and pour the sauce over the chicken.
Mix the cheese and onions in a bowl and sprinkle over the chicken.Bake the chicken in a preheated 450° oven for
12 to 14 minutes.
