For the Cake:

2 1/2 cups all-purpose flour


2 1/2 teaspoons baking powder

1/2 teaspoon salt

1 cup unsalted butter, at room temperature

2 cups granulated sugar

4 large eggs


2 teaspoons vanilla extract

1 cup milk

1 cup mango puree (fresh or canned)

For the Mango Filling:

2 cups diced fresh mangoes


1/4 cup sugar

1 tablespoon cornstarch

1 tablespoon water

For the Whipped Cream Frosting:

2 cups heavy cream


1/2 cup powdered sugar

1 teaspoon vanilla extract

For Garnish:

Additional diced mangoes

Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Prepare the Cake Batter:


In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, beat the butter and sugar together until light and fluffy.

Add the eggs one at a time, beating well after each addition.

Mix in the vanilla extract.

Gradually add the dry ingredients to the wet mixture, alternating with the milk and mango puree.

Begin and end with the dry ingredients.

Bake the Cakes:

Divide the batter evenly between the prepared cake pans.

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out


Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Prepare the Mango Filling:

In a saucepan, combine the diced mangoes and sugar.

In a small bowl, mix the cornstarch and water until smooth, then add to the mango mixture.

Cook over medium heat until the mixture thickens, stirring constantly. Remove from heat and let cool.

Prepare the Whipped Cream Frosting:

In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Assemble the Cake:

Place one cake layer on a serving plate. Spread a layer of mango filling on top.

Add a layer of whipped cream frosting over the mango filling.

Place the second cake layer on top.

Frost the entire cake with the remaining whipped cream frosting.


Garnish the top of the cake with additional diced mangoes.


Chill the cake in the refrigerator for at least 1 hour before serving to allow the flavors to meld.
