MUSHROOMS WITH ROASTED GARLIC

• 16 cups same size mushrooms, opened, with stems trimmed
• 3 tablespoons olive or coconut oil
• 1/4 c unsalted butter, softened
• 3 garlic cloves, finely chopped

• 2 tablespoons chopped fresh thyme
• 1 1/2 tablespoons lemon juice
• salt and freshly ground black pepper to taste
• 1/4 cup fresh breadcrumbs
Preheat the oven to 200°C/400°F/gas mark 6. Lightly fry the mushrooms, caps down, in hot oil for 20 seconds.

Place the mushrooms in a shallow roasting pan with the stems facing up.
Mix butter, garlic, thyme, lemon juice and spices. Pour some garlic butter over each mushroom, then lightly press
the breadcrumbs on top.Store in the refrigerator for later use or cook immediately in the oven for 10 minutes.
