Potato Rosti Recipe
Ingredients:
4 large potatoes
1 small onion, finely grated (optional)
Salt and pepper, to taste
2-4 tablespoons butter or oil, for frying

Peel the potatoes. Grate them using the coarse side of a grater. If you have time, you can soak the grated potatoes in cold water for a few minutes to remove excess starch, then drain and squeeze out as much moisture as possible using a clean kitchen towel.
Season:
Mix the grated potatoes with the grated onion if using. Season generously with salt and pepper.
Heat the Pan:
Heat a non-stick frying pan over medium heat and add enough butter or oil to generously coat the bottom of the pan.

Form the Rosti:
Place a mound of the grated potato mixture in the pan. Flatten it with a spatula to form a pancake about 1/2 inch thick. You can make one large rosti or several smaller ones.
Cook:
Cook over medium heat for about 5-7 minutes, or until the bottom is golden brown and crispy.
Carefully flip the rosti over and cook the other side for another 5-7 minutes or until it is golden brown and the potatoes are cooked through.

Serve the rosti immediately while hot and crispy. They can be topped with sour cream, fresh herbs, or your choice of accompaniments.
