2 large apples, peeled, cored and diced


1 1/2 cups all-purpose flour

1/4 cup granulated sugar

1/4 cup brown sugar

2 teaspoons baking powder

1 1/2 teaspoons ground cinnamon


1/2 teaspoons salt

2/3 cup milk

2 eggs, lightly beaten

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

confectioners’ sugar, for dusting (optional)


Preheat the oven to 175°C (350°F) and lightly grease a baking tray.

Mix flour, granulated sugar, brown sugar, baking powder, cinnamon and salt in a large bowl.

In another bowl, whisk together milk, eggs, melted butter and vanilla.


Add the wet ingredients to the dry ingredients and mix until well combined. Add the diced

apples.Drop the dough onto the prepared baking sheet, spacing 2 ounces apart.

Bake for 15-20 minutes until golden brown and firm. Allow to cool in the pan for 5 minutes then

transfer to a wire rack.

Sprinkle with powdered sugar if desired before serving.
