Strawberry Coconut Balls
Ingredients:
– 2 cups frozen strawberries, thawed and drained
– 2 1/2 cups shredded coconut, unsweetened, plus some for rolling
– 1/3 cup coconut flour
– 1/4 cup honey or maple Syrup
– 1 teaspoon vanilla extract

Instructions:
1. First put the thawed strawberries in a food processor and chop them until you get a chunky puree.
2. In a large bowl, stir together the grated coconut, coconut flour, honey (or maple syrup), vanilla extract and a
pinch of salt until well combined.
3.Add the strawberry puree to the coconut mixture and stir until evenly combined.

4. The fun begins now! Scoop out the mixture with a tablespoon and form into balls with your hands. If the
mixture is too sticky, put it in the fridge for about 10 minutes to firm up a little.5. Roll each ball in additional
shredded coconut until completely coated.
6. Place the balls on a baking tray lined with parchment paper and refrigerate for at least an hour or until firm.
7.Once ready, place the strawberry coconut balls in an airtight container and store in the fridge until you’re ready

Variations and Tips:
– If you have a sweet tooth, drizzle a little melted white chocolate over the balls to give them more flavor.
– You can replace the strawberries with other berries like raspberries or blueberries to give a different flavor.
