Upside pineapple fudge
Ingredients:
• 1 can (20 OZ) Crushed pineapple, dripped
• 1 cup of unsalzen butter
• 2 C crystal sugar
• 3/4 C SCHNET
•1/4 cup light corn syrup

•1/4 cup salt
•1 cup vanilla
•1 cup white chocolate chips
•1/2 cup chopped maraschino cherries
• 1/2 c chopped American walnuts

Methods:
Line a 20 cm square baking dish with baking paper so that a layer protrudes on the sides. Parchment
paper greased with cooking spray.
Spread the draining board and mash the pineapple evenly in the bottom of the prepared baking dish.
Melt the butter in a saucepan over the heat. Add sugar, heavy cream, corn syrup and salt.stir until
everything is well mixed.

Bring to the boil, stirring constantly. Reduce heat to medium-low and continue cooking until mixture
reaches 236°F on a candy thermometer, stirring occasionally.
Remove the pan from the heat and add the vanilla extract, white chocolate chips, chopped
maraschino cherries and chopped walnuts until smooth.
Pour the fudge mixture over the pineapple in a baking dish.Smooth the top of the fudge with a

. Once the fudge has hardened, remove it from the baking pan using the excess baking paper. Cut
into squares and serve.
