WHITE BEAN AND HAM SOUP

 

This is the best bean and ham soup! Preparing on the stovetop takes just a few hours with minimal effort and

always results in a hearty, filling dinner. Serve with homemade cornbread.

INGREDIENTS

 

▢20 ounces dried Great Northern beans

▢1 tablespoon olive oil

▢1 medium sweet onion

▢3 celery stalks

▢2 carrots

▢2 garlic cloves

▢8 cups water

▢2 teaspoons Italian seasoning

▢ 2 cups diced cooked he ham

▢1 tablespoon salt

▢2 teaspoons ground pepper

INSTRUCTIONS

 

Rinse and sort the beans, removing all stones and debris. Put aside.

Dice onion, celery and carrots. Chop the garlic.

Place the oil in a large pot over medium heat.When hot, add the onion, celery and carrot.

Cook vegetables until tender, about 5 minutes. Add the garlic and cook for another 30 seconds.

Add the water and Italian seasoning to the pot along with the dried beans.

Bring to the boil over medium heat, reduce to a simmer and cover with a lid.Cook, stirring every 30 minutes, for 2

hours, until the beans are almost tender.

Add ham, salt and pepper to the soup. Simmer for another 30 minutes to another hour, or until the beans are

fully cooked.

Just before serving, add additional water or chicken broth to the pot to thin the soup to the desired consistency.

Taste and season with additional salt and pepper if necessary.

TIPS & NOTES:

 

If your soup is thicker than you would like, add additional water or broth as needed to reach desired consistency.

We like to use leftover ham in this recipe, but chilled ham cubes from the supermarket also work well.

We originally called for Hurst beans in this recipe, which come with a small spice packet. Since many readers had

difficulty finding this particular brand, we modified the recipe slightly. To season the soup even more, add 2

teaspoons each of garlic powder, onion powder, and smoked paprika, along with Italian seasoning and salt after

cooking.
