Zucchini Patties

 

 

Ingredients:

2 huge zucchini (almost 300g)

1 onion or leek

1 garlic clove (optional)

Aromatic herbs: flat-leaf parsley, mint, basil or coriander

1 egg

1 teaspoon flour

2 tablespoons of overwhelming cream (classic or vegan)

salt pepper

Paprika, curry, part pepper, etc…

butter / oil for frying

Instructions:

-Wash, dry and grind the zucchini. Put it in a clean towel and crush it well to evacuate the juice.

-Finely chop the onion or shallot and parsley

-Mix with ground zucchini, at that point include the cream and all the eggs, blend, at that point flour, salt, pepper and flavors and mix.

-Heat 20 grams of butter and a small sunflower oil in a broiling container and orchestrate little hills of the planning, smooth them into patties and cook for 3 minutes on each side, until brilliant
