Ingredients:

  • 2 cans of tuna in water (drained)

  • 2 eggs

  • ¼ cup ground oats  (or oat flour)

  • 2 tablespoons finely chopped onion

  • 1 garlic clove, minced

  • 2 tablespoons chopped parsley

  • Salt and pepper to taste

  • A splash of lemon juice

  • Olive oil spray or light oil for cooking

Instructions:

 Mix the ingredients:
In a large bowl, combine the tuna, eggs, ground oats, onion, garlic, parsley, salt, pepper, and lemon juice. Mix until a uniform dough forms.

 Form patties:
Use your hands to shape the mixture into 6–8 small patties. If the mixture is too wet, add a bit more oats.

 Cook the patties:
Preheat a lightly greased nonstick skillet over medium heat. Cook the patties for 3–4 minutes per side until golden brown and cooked through.

 Serve & enjoy:
Serve hot with salad, over brown rice, or in a lettuce wrap for a low-carb meal.
