 Ingredients

For the Egg Salad:

  • 6 hard-boiled eggs, peeled and chopped

  • ¼ cup mayonnaise

  • 1 tsp Dijon mustard

  • 1 tbsp chopped chives (plus more for garnish)

  • Salt and pepper to taste

For the Sandwich:

  • 4 slices of crusty bread or sandwich rolls

  • Butter lettuce (optional)

 Directions

1. Make the Egg Salad:

In a medium bowl, combine chopped eggs, mayo, mustard, lemon juice, and chives.
Mix well and season with salt and pepper to taste.

2. Toast the Bread:

Optional: Lightly toast the bread for texture and added crunch.

3. Assemble:

Spread the egg salad on a slice of bread. Add lettuce or tomato if desired.
Top with the second slice of bread and press gently.

4. Serve:

Cut in half and sprinkle extra chives on top. Serve immediately or wrap for later.
