Ingredients:

  • 4 medium russet potatoes, peeled

  • 1 small onion, grated (optional)

  • 2 eggs

  • 1/4 cup all-purpose flour

  • Vegetable oil for frying

Directions:

  1. Grate the potatoes using a box grater or food processor. Place the grated potato in a clean towel and squeeze out as much moisture as possible.

  2. In a bowl, mix the potatoes, grated onion, eggs, flour, salt, and pepper.

  3. Heat oil in a skillet over medium-high heat. Drop spoonfuls of the potato mixture into the pan and flatten slightly with a spatula.

  4. Fry 2–3 minutes on each side or until golden brown and crispy.

  5. Remove and place on paper towels to drain excess oil.
