Lemon coconut loaf
Ingredients
• 1 cup flour (all-purpose or cake)
• 1/2 cup white sugar
• 1/2 cup desiccated coconut
• 1/2 cup salted butter

• 1/2 cup milk
• 2 eggs
• Lemon zest of 1 lemon
• 2 tablespoons of fresh lemon juice
• 1 and 1/2 teaspoons of baking powder

• 1 teaspoon of vanilla extract
• 1/4 teaspoon of salt
Note:
All ingredients are available at room temperature. should be at temperature. Do not use cold
products.
Instructions
Preheat the oven to 180 degrees Celsius

1. Add the sugar, oil and lemon zest to a large bowl. Beat until light and fluffy.
2. Then add the eggs one by one and mix. Add vanilla extract, milk and fresh lemon juice and mix well.
3. Sift the flour, baking powder and salt. Mix dry and wet ingredients until well mixed. DON’T BE
EXCESSED.
4. Finally add the coconut. Mix carefully.

5. Cover a baking tray with baking paper. Pour the mixture into the pot. Sprinkle coconut on top.
Bake in preheated oven for 25-30 minutes or until cooked through.
Note:
If you are using salted butter, do not add salt to the recipe.
