Classic BBQ Ribs

 

 

 

Ingredients:

 

For the Ribs:

2 racks of pork ribs (baby back or spare ribs)

1/4 cup paprika

1/4 cup brown sugar

2 tablespoons black pepper

2 tablespoons salt

1 tablespoon chili powder

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon cayenne pepper (optional for extra heat)

1 cup apple juice or apple cider vinegar (for basting)

For the BBQ Sauce:

2 cups ketchup

1 cup brown sugar

1/2 cup apple cider vinegar

1/4 cup molasses

2 tablespoons Worcestershire sauce

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon black pepper

1/2 teaspoon salt

Instructions:

 

Prepare the Ribs:

Remove the membrane from the back of the ribs for tender results.

Mix the paprika, brown sugar, black pepper, salt, chili powder, garlic powder, onion powder, and

cayenne pepper in a bowl to make the dry rub.

Generously rub the spice mixture all over both sides of the ribs. Let them sit for at least an hour, or

refrigerate overnight for more flavor.

Preheat and Prepare Grill:

Preheat your grill to 225°F (110°C) for indirect grilling. If using a charcoal grill, arrange the coals to

one side. If using a gas grill, leave one side off.

Cook the Ribs:

Place the ribs on the grill over indirect heat (the side without coals or flame).

Cover and cook for 2 1/2 to 3 hours, basting with apple juice or apple cider vinegar every hour to

keep them moist.

Prepare the BBQ Sauce:

While the ribs are cooking, mix all the BBQ sauce ingredients in a saucepan.

Bring to a boil, then reduce the heat and simmer for 15-20 minutes, stirring occasionally until the

sauce thickens.

Finish the Ribs:

During the last 30 minutes of cooking, baste the ribs with the BBQ sauce.

Move the ribs directly over the heat source for the last few minutes to caramelize the sauce, but watch

closely to avoid burning.

Serve:

Remove the ribs from the grill and let them rest for 10 minutes.

Cut between the bones to separate the ribs and serve with extra BBQ sauce on the side.
