Ingredients

 

 

or 1 14.5 oz. package Nacho Cheese Doritos Chips, lightly shredded

or 2 1/2 cups shredded cooked chicken

or 1 13.25 oz. Can black beans, rinsed and drained

or 1 13.25 ounce can whole corn kernels, rinsed and drained

or 1 1/2 cups grated Mexican blend cheese, divided

or 1 10 ounces. Can Diced Tomatoes with Green Chilies

or 1 4 oz. Can Diced Green Chilies

or 1 10.75 oz.Can Condensed Cream of Chicken

or 1 8 oz. Container

Sour Cream or 1 tablespoon

Taco Seasoning How to Make

 

 

Doritos Chicken Casserole 1. Preheat oven to 350°F and lightly grease a 9×13 inch baking dish with nonstick spray.

2. In a large bowl, combine chicken, black beans, corn, 1 cup Mexican blend cheese, diced tomatoes and green chiles, cream of chicken soup, sour cream and taco seasoning.Mix until completely

incorporated.

3. Spread half of the lightly crushed Doritos chips in the baking dish, then pour the chicken mixture over them and spread evenly.

4. Bake in the preheated oven for 20 minutes.5. Remove from oven and top with remaining Doritos and cheese. Return to the oven and bake for another 5-7 minutes, or until the cheese is melted

and bubbly.

6. Remove from the oven and serve hot, garnished with coriander if desired.Notes:

If you prefer a spicier meal, add a can of diced jalapenos or some chopped fresh jalapenos to the mix.

For this recipe, you can use leftover rotisserie chicken instead of cooking chicken breasts. This dish can be made in advance and refrigerated for up to 24 hours before baking. Make sure to add the

remaining Doritos and cheese right before baking.

You can also freeze this casserole for up to 3 months.Thaw in the refrigerator overnight before baking.
