Easy Coconut Blender Cake
A deliciously moist and fluffy coconut cake that comes together effortlessly using your blender!
Ingredients:

3 large eggs
-
300 ml milk
-
2 tablespoons margarine or butter (softened)

1½ cups sugar

A pinch of salt

2 cups all-purpose flour
-
½ cup cornstarch (Maizena)

1 packet shredded coconut (100 grams)

1 tablespoon baking powder

Step-by-Step Preparation:

Blend the wet ingredients:
In a blender, add the eggs, milk, margarine (or butter), sugar, and pinch of salt. Blend for about 2 minutes until smooth. -
Add flour in stages:
Add half of the flour to the blender and mix until well incorporated. Then add the remaining flour and cornstarch, blending again for another 2 minutes. -
Combine with dry ingredients:
Pour the batter into a large bowl. Add the shredded coconut and baking powder. Gently mix everything together using a spatula or wooden spoon until evenly combined. -
Prepare the pan:
Grease and flour a bundt or ring-shaped cake pan. Pour in the batter and spread it evenly. -
Bake:
Place the pan in a preheated oven at 200°C (390°F) and bake for about 30 minutes, or until golden and a toothpick inserted into the center comes out clean.ADVERTISEMENT

Cool and serve:
Let it cool slightly before removing from the pan. Serve warm or at room temperature. -
