The Pioneer Woman’s Cowboy Quiche

INGREDIENTS

 

• 1 unbaked pie crust

• 2 yellow onions, thinly sliced ​​

• 2 tablespoons butter

• 8 slices bacon

• 8 large eggs

• 1 1/2 cups cream or half and half

• Kosher salt and freshly ground black pepper, to taste

• 2 cups sharp cheddar cheese, grated

PREPARATION

Preheat the oven to 400°F.

In a large skillet over medium-low heat, melt the butter and then fry the onions until golden brown,

stirring occasionally. This will take at least 15 to 20 minutes. Let cool down.

Cook bacon until chewy but not too crispy.Cut into small pieces and set aside.

Spread the cake batter in the cake tin.

In a large bowl, whisk together eggs, cream, salt and pepper, then add onion, bacon and cheese and

stir to combine.

Pour the filling over the cake base and cover loosely with aluminum foil. Place on a rimmed baking

sheet and bake for 45 minutes.Remove the foil and allow to bake for another 10-15 minutes until

golden brown.

Let rest for 10-15 minutes before serving. Cut, serve and enjoy!
