Hearty Vegetable Soup Recipe
Ingredients:
2 tablespoons olive oil

1 large onion, chopped
3 cloves garlic, minced
3 carrots, peeled and sliced
3 celery stalks, sliced
3 potatoes, peeled and diced

1 zucchini, diced (optional)
1 can (14.5 oz) diced tomatoes
6 cups vegetable broth
1 teaspoon dried thyme
1 teaspoon dried basil

Salt and pepper to taste
1 cup green beans, chopped (fresh or frozen)
1 cup corn kernels (fresh, frozen, or canned)
Fresh parsley, chopped (for garnish)
Instructions:
Prepare Vegetables:

Heat olive oil in a large pot over medium heat.
Add the chopped onion and sauté until translucent.
Add the minced garlic, sliced carrots, and celery. Cook for about 5-7 minutes until the vegetables begin to soften.
Simmer Soup:
Add the diced potatoes, zucchini (if using), and canned tomatoes with their juice to the pot. Stir to combine.
Pour in the vegetable broth and add the dried thyme and basil. Season with salt and pepper to taste.
Bring the soup to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the potatoes and other vegetables are tender.
Add Final Vegetables:
Stir in the green beans and corn kernels. Continue to simmer for another 5-10 minutes until all the vegetables are cooked through.
