Low-Carb Chocolate Cottage Cheese Mousse

Ingredients:

  • 1 cup low-fat cottage cheese

  • 2–3 tbsp unsweetened cocoa powder

  • 2–3 tbsp low-carb sweetener (erythritol, stevia, or monk fruit)

  • 1 tsp vanilla extract

  • A pinch of salt

  • Optional: sugar-free chocolate chips or crushed nuts for garnish

Instructions:

1️⃣ Blend the base:
Add cottage cheese, cocoa powder, sweetener, vanilla, and salt to a food processor or high-speed blender.

2️⃣ Blend until smooth:
Process for 1–2 minutes until you get a silky, mousse-like texture. Scrape down the sides as needed.

4️⃣ Chill or serve:
