1 cup Coca-Cola

1/4 cup soy sauce

3 Tbsp vegetable oil

1 (3-5 lb) pork loin roast

For the Cola Sauce:

1 Tbsp cornstarch

2 Tbsp butter

1/2 tsp dry mustard

2/3 cup Coca-Cola

1/3 cup balsamic vinegar

Instructions

In a baking dish, whisk together all the marinade ingredients. Add the pork loin, ensuring it is fully coated, and refrigerate overnight.

Preheat your oven to 325°F. Remove the pork from the marinade and roast for 30-40 minutes per pound, or until the internal temperature reaches 175°F.

While the pork is roasting, prepare the sauce. In a saucepan, whisk together the sauce ingredients. Bring to a boil, then reduce to a simmer, stirring occasionally, until thickened.

Pour the sauce over the pork loin and continue roasting for an additional 30 minutes.

Let the pork rest for 5 minutes before slicing. Serve and enjoy!
