 Ingredients

  • 200g unsalted butter, at room temperature

  • 200g sugar

  • 3 large eggs

  • 1 tsp almond extract

  • 150g all-purpose flour

  • 50g ground almonds (almond flour)

  • 1 tsp baking powder

  • A pinch of salt

  • 100g sliced almonds

Optional for garnish:

  • Powdered sugar

 Directions

 1. Preheat the Oven

Preheat oven to 180°C (350°F). Grease and line a 20 cm (8-inch) round or rectangular cake pan.

 2. Cream the Butter & Sugar

Beat the butter and sugar together until light and fluffy using a hand mixer or stand mixer.

 3. Add Eggs & Almond Extract

Add the eggs one at a time, mixing well after each. Stir in the almond extract.

 4. Mix Dry Ingredients

In another bowl, whisk together the flour, ground almonds, baking powder, and salt.

 5. Combine Wet & Dry

Gradually add the dry ingredients to the butter mixture. Mix until just combined.

 6. Fold in Almonds

Fold in most of the sliced almonds, saving a handful for the topping.

7. Pour and Smooth

Pour batter into the prepared pan and smooth the top with a spatula.

Sprinkle the reserved sliced almonds over the batter.

9. Bake

Bake for 30–40 minutes, or until golden brown and a toothpick comes out clean.

 10. Cool & Garnish

Let the cake cool fully before removing it from the pan. Dust with powdered sugar just before serving.
