German Chocolate Cake Recipe
Ingredients:
For the Cake:
1 package (4 oz) German sweet chocolate
1/2 cup boiling water
1 cup butter, softened
2 cups sugar

4 large eggs, separated
1 teaspoon vanilla extract
2 1/2 cups cake flour
1 teaspoon baking soda
1/2 teaspoon salt

1 cup buttermilk
For the Coconut-Pecan Filling:
1 cup evaporated milk
1 cup sugar
3 large egg yolks, lightly beaten

1/2 cup butter
1 teaspoon vanilla extract
1 1/3 cups sweetened shredded coconut
1 cup chopped pecans

For the Cake:

Preheat Oven:
Preheat the oven to 350°F (175°C).
Grease and flour three 9-inch round cake pans.
Prepare Chocolate:
Break the chocolate into pieces and melt it in boiling water. Let it cool.
Mix Batter:
In a large mixing bowl, cream the butter and sugar until light and fluffy.
Add the egg yolks, one at a time, beating well after each addition.
Stir in the melted chocolate and vanilla.

Combine Dry Ingredients:
In a separate bowl, sift together the flour, baking soda, and salt.
Add the dry ingredients to the chocolate mixture alternately with the buttermilk, beginning and ending with the flour mixture.
Beat Egg Whites:
In a clean bowl, beat the egg whites until stiff peaks form.
Fold the beaten egg whites into the batter.
Bake:
Divide the batter evenly among the prepared pans.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Cool the cakes in the pans for 10 minutes, then remove from pans to wire racks to cool completely.
For the Coconut-Pecan Filling:
Cook Filling:
In a medium saucepan, combine the evaporated milk, sugar, egg yolks, butter, and vanilla.
Cook over medium heat, stirring constantly, until the mixture thickens, about 12 minutes.
Remove from heat and stir in the coconut and pecans.
Cool until thick enough to spread.
Assemble the Cake:
Layer Cake:
Place one cake layer on a serving plate.
Spread one-third of the coconut-pecan filling over the cake layer.
Repeat with the second and third layers, spreading the remaining filling on top and sides of the cake.
