Strawberry Éclair Cake (No-Bake Delight!)

This creamy, fruity, no-bake dessert layers graham crackers, rich pudding, fresh strawberries, and strawberry frosting for a dreamy chilled treat. A perfect make-ahead option for gatherings!

Ingredients

  • 14.4 oz graham crackers

  • 3.4 oz cheesecake-flavored instant pudding mix

  • 1½ cups cold whole milk

  • 8 oz whipped topping, thawed

  • 1 lb fresh strawberries, washed, hulled & sliced

  • 16 oz store-bought strawberry frosting

Step-by-Step Directions

  1. Make the Filling
    In a large bowl, whisk together the pudding mix and cold milk until thickened. Gently fold in the whipped topping until smooth.

  2. Layer the Base
    In a 9×13 inch baking dish, place a single layer of graham crackers on the bottom.

  3. Build the Layers
    Spread half of the pudding mixture evenly over the graham crackers. Add a layer of sliced strawberries. Repeat the layers: crackers, pudding, strawberries.

  4. Top it Off
    Add one last layer of graham crackers on top.

  5. Finish with Frosting
    Warm the strawberry frosting in the microwave for 10–15 seconds until pourable. Spread evenly over the final cracker layer.

  6. Chill
    Cover with plastic wrap or foil and refrigerate for at least 4 hours or overnight.

  7. Serve & Enjoy
    Cut into 12 slices. Garnish with extra strawberries if desired.
