  • 1 onion finely diced
  • 1 tbsp yellow mustard
  • ½ tsp black pepper
  • 1 cup cooked crumbled bacon
  • 3 cups cooked white rice
  • 1 cup shredded cheddar cheese
  • 1 red bell pepper diced (optional)
  • ½ tsp garlic powder
  • Salt to taste

Method

  2. Cook bacon until crispy, set aside.
  3. Brown beef and onion in same skillet, drain excess grease.

  6. Add rice, mix well.
  7. Stir in cheddar until melted.
  8. Top with bacon and extra cheese, serve hot.

Notes:
Swap rice for cauliflower rice for low-carb version.
Use pepper jack cheese for extra kick.
