Best Ever Easy Vegetable Beef Soup

Ingredients
  

  • 1 ½ lbs beef stew meat
  • 2 ½ Tbsp olive oil divided
  • Salt and pepper to taste
  • 1 ¾ cups chopped yellow onion 1 large
  • 1 ¼ cups chopped carrots 3 medium
  • 1 cup chopped celery 3 medium
  • 1 ½ Tbsp minced garlic 4 cloves
  • 8 cups low-sodium beef broth or chicken broth
  • 2 cans 14 oz each diced tomatoes
  • 1 ½ tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • 1 lb red or yellow potatoes chopped
  • 1 ½ cups green beans chopped (5 oz)
  • 1 ½ cups frozen corn
  • 1 cup frozen peas
  • cup fresh parsley chopped

Equipment

  • Dutch oven or large soup pot

Method
 

  1. Brown beef in olive oil, seasoning with salt and pepper. Remove and set aside.
  2. Sauté onions, carrots, and celery for 3 minutes. Add garlic and cook for 1 minute.
  3. Add broth, tomatoes, beef, and seasonings. Bring to a boil, then simmer covered for 30 minutes.
  4. Add potatoes and cook 20 minutes.
  5. Stir in green beans and cook 15 minutes.
  6. Add corn and peas, simmer for 5 minutes.
  7. Stir in fresh parsley and serve hot.

Notes

This soup tastes even better the next day.
For extra flavor, deglaze the pot with a splash of red wine before adding broth.
Perfect for freezing in portion-sized containers.
