Method
- Brown beef in olive oil, seasoning with salt and pepper. Remove and set aside.
- Sauté onions, carrots, and celery for 3 minutes. Add garlic and cook for 1 minute.
- Add broth, tomatoes, beef, and seasonings. Bring to a boil, then simmer covered for 30 minutes.
- Add potatoes and cook 20 minutes.
- Stir in green beans and cook 15 minutes.
- Add corn and peas, simmer for 5 minutes.
- Stir in fresh parsley and serve hot.
Notes
This soup tastes even better the next day.
For extra flavor, deglaze the pot with a splash of red wine before adding broth.
