- Preheat oven to 350°F. Grease dish.
- Make roux with butter & flour.
- Add milk, season with salt & cayenne.
- Stir in cheddar until melted.
- Layer half potatoes, half sauce. Repeat.
- Top with cheese & paprika.
- Bake 1 hour until golden.
- Cool slightly before serving.
Notes
Swap cheddar for Gruyère for a richer taste.
Add onions or bacon for variation.
Best eaten fresh, but leftovers reheat well.
