Ingredients
  

  • 4 cups potatoes sliced
  • 3 tbsp butter
  • 3 tbsp flour
  • 1 ½ cups milk
  • 1 tsp salt
  • 1 dash cayenne pepper
  • 1 cup cheddar cheese
  • ½ cup grated cheese
  • Paprika

Method
 

  1. Preheat oven to 350°F. Grease dish.
  2. Make roux with butter & flour.
  3. Add milk, season with salt & cayenne.
  4. Stir in cheddar until melted.
  5. Layer half potatoes, half sauce. Repeat.
  6. Top with cheese & paprika.
  7. Bake 1 hour until golden.
  8. Cool slightly before serving.

Notes

Swap cheddar for Gruyère for a richer taste.
Add onions or bacon for variation.
Best eaten fresh, but leftovers reheat well.
