Ingredients
  

  • 1 cup butter softened
  • ½ cup sugar
  • 1 egg yolk
  • 1 tsp vanilla
  • 1 ¾ cups flour
  • ½ tsp salt
  • 1 cup pecans chopped, toasted
  • Powdered sugar for rolling

Equipment

  • Baking sheet, parchment paper, mixer, cooling rack.

Method
 

  1. Preheat oven to 350°F. Toast and chop pecans.
  2. Beat butter and sugar until fluffy.
  3. Add egg yolk + vanilla.
  4. Mix flour + salt, add to wet mixture.
  5. Fold in pecans.
  6. Roll dough into balls, place on baking sheet.
  7. Bake 12–15 minutes until bottoms are golden.
  8. Roll warm cookies in powdered sugar. Cool and roll again.

Notes

Store at room temp 5 days, fridge 7 days, or freeze 2 months.
