Method
- Preheat oven to 350°F. Toast and chop pecans.
- Beat butter and sugar until fluffy.
- Add egg yolk + vanilla.
- Mix flour + salt, add to wet mixture.
- Fold in pecans.
- Roll dough into balls, place on baking sheet.
- Bake 12–15 minutes until bottoms are golden.
- Roll warm cookies in powdered sugar. Cool and roll again.

Store at room temp 5 days, fridge 7 days, or freeze 2 months.
