  • ½ onion finely chopped
  • ½ red bell pepper finely chopped
  • 1 small handful parsley optional
  • 1 cup shredded cheese mozzarella, cheddar, or a mix
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 tsp salt
  • ½ tsp garlic powder optional
  • ½ tsp black pepper
  • Vegetable oil for frying

Method
 

  1. Instructions:
  2. Grate the carrot and finely chop the onion, bell pepper, and parsley.
  3. In a mixing bowl, combine veggies with shredded cheese.
  4. Add eggs and mix to coat everything.
  5. Add flour, salt, pepper, and garlic powder. Mix well.
  6. Heat oil in a pan over medium heat.
  7. Scoop spoonfuls of batter and drop into hot oil.
  8. Fry 2–3 minutes per side until golden.
  9. Remove and drain on paper towels.
  10. Repeat with remaining batter. Serve warm.

Notes:
• You can swap in zucchini, corn, or chopped spinach.
• To make it gluten-free, use oat flour or almond flour.
• Try baking or air frying for a lighter version.
