- Instructions:
- Grate the carrot and finely chop the onion, bell pepper, and parsley.
- In a mixing bowl, combine veggies with shredded cheese.
- Add eggs and mix to coat everything.
- Add flour, salt, pepper, and garlic powder. Mix well.
- Heat oil in a pan over medium heat.
- Scoop spoonfuls of batter and drop into hot oil.
- Fry 2–3 minutes per side until golden.
- Remove and drain on paper towels.
- Repeat with remaining batter. Serve warm.
