- Prep the Jello: In a large bowl, dissolve the orange Jello in boiling water. Stir well until completely dissolved, then add cold water.
- Chill Base: Refrigerate for 20 minutes until it thickens slightly and becomes syrupy.
- Add Pudding Mix: Whisk in the instant vanilla cheesecake pudding mix until smooth. Chill again for another 20 minutes.
- Fold Ingredients: Gently fold in Cool Whip, mandarin oranges, and marshmallows using a rubber spatula.
- Final Chill: Cover and refrigerate for 1–2 hours before serving.
- Garnish & Serve: Top with orange slices, extra marshmallows, and mint leaves if desired.
Notes
For extra flavor, use fresh orange slices instead of canned mandarin oranges.
Make it lighter by using sugar-free pudding and light Cool Whip.
Can be made a day ahead, making it perfect for parties and potlucks.
Store leftovers covered in the refrigerator for up to 3 days.
