  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • 6 tbsp unsalted butter melted
  • 2 cups sweetened condensed milk
  • 1 cup fresh lemon juice
  • 4 large egg yolks
  • Zest of 2 lemons

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Combine graham cracker crumbs, sugar, and melted butter, press into a baking dish, and bake for 10 minutes.
  3. Mix sweetened condensed milk, lemon juice, egg yolks, and lemon zest, pour over the crust.
  4. Bake for 15-20 minutes, cool, and refrigerate for 2 hours before slicing.

Notes

Add a meringue topping if you prefer a sweeter flavor.
Use gluten-free graham crackers for a gluten-free version.
