  • 8 oz crushed pineapple undrained
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 ½ teaspoons cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chopped pecans
  • For the Cream Cheese Frosting:
  • 8 oz cream cheese softened
  • ½ cup butter softened
  • 3 ½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • Topping:
  • ½ cup chopped pecans

Method
 

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Mix Wet Ingredients: In a large bowl, whisk together eggs, oil, and sugar until light and fluffy.
  3. Add Fruits: Mix in mashed bananas, crushed pineapple (with juice), and vanilla extract.
  4. Combine Dry Ingredients: In another bowl, combine flour, cinnamon, baking soda, and salt. Gently fold into the wet mixture.
  5. Add Pecans: Stir in chopped pecans.
